What's The Catch
No Wimpy Flavors
1 lb Striped Bass
1/2 Tbl Lola’s Spices Southwest Blend
1 Cup Basmati Rice
¼ cup Cilantro * leaves and stems, freshly chopped
1/2 Jalapeno *chopped, seeds removed for less heat
1 tsp Olive Oil
2 Cups Water
1 tsp butter
¼ tsp Salt *or to taste
Preheat oven to 375 F, on a sheet pan drizzle Striped Bass with EVOO on both sides and sprinkle liberally with Lola’s Spices Southwest blend. Place in the center rack of oven and cook for 15 mins or until cooked through at the recommended temperature of 145 F.
Over medium heat, add rice, butter, EVOO, Cilantro, Jalapeno, salt, and cook for about 3 mins or until jalapenos are soft and rice is toasted. Add water, stir, cover with lid, reduce heat and continue to cook for 15 mins. Remove from heat, rest for 5 mins. Fluff with a fork and serve.
