Preheat oven to 375 F, on a sheet pan, drizzle Turbot with EVOO, and sprinkle liberally on both sides with Lola’s Spices Southwest blend. Place in oven, on the center rack, skin side down and cook for 10 to 12 mins or until cooked through at the recommended temperature of 145 F.
For the Lentils & Carrots
Over medium heat, in a pot with a lid, add onions, tomato paste, garlic, Boullion, lentils, water and a bay leaf stir and cover with lid, slightly ajar. Cook for about 12 mins, add carrots and continue to cook for another 8 to 10 mins or until desired tenderness. Remove bay leaf before serving.
