Drizzle Snapper filets with Olive Oil and sprinkle Lola’s Spices Southwest liberally on both sides. Over medium heat, place the filets skin side down and cook for 4 mins flip, cover, and continue to cook 2 to 4 mins. or until fish is cooked through at the recommended temperature of 137 F.
For Rice and Pigeon Peas
Over medium heat, add oil, onions and garlic saute for 2 mins. Next, add rice and continue to cook while stirring for another 3 mins. Add tomato sauce, water, Lola’s Spices SW, and Peas, stir and cover reduce heat to low, and cook for another 15 mins. Remove from heat and rest for 5 mins. Fluff with fork and serve.
