Preheat the oven to 350 F, drizzle Salmon with EVOO on both sides and sprinkle liberally with Lola’s Spices Southwest blend. Cook for about 10 to 12 minutes or until cooked through at the recommended temperature of 145 F.
For the Chimichurri
Combine all ingredients and rest for 20 mins. Add more vinegar or salt to taste.
For the Zucchini & Squash with Parmesan
Preheat the oven to 400F, combine the first 5 ingredients and arrange on a sheet pan in a single layer. Place in the oven on the center rack and cook for about 15 mins or until tender. Remove and sprinkle Parmesan and continue to cook until melted.
